Vegetable Curd Sandwich

INGREDIENTS

  • Milk Bread Slices – 6
  • Purabi Plain Set Curd – 400 ml
  • Butter – 2-3 cubes
  • Cabbage (finely chopped) – 1 cup
  • Carrot (finely chopped) – 1 cup
  • Capsicum (finely chopped) – ½  cup
  • Boiled Sweet Corn ( Mashed) – 1 cup

Please note – You may use your choice of veggies as well!

For Seasoning -

  • Salt
  • Mixed Herbs
  • Garlic Powder
  • Black Pepper

METHOD

Step 1 – Prepare Hung Curd

  • Squeeze out water from curd using a cheese cloth.
  • Place the block of hung curd formed in a bowl.

Step 2 – Prepare the Filling

  • Add all the chopped veggies into the hung curd.
  • Season it well with salt, herbs, garlic powder and black pepper.
  • Gently mix all the ingredients together with the help of a spoon or a fork.

Step 3 – Prepare the Sandwich

  • Trip the rough edges of the bread and place it in line.
  • Evenly spread out the filling in three of the slices generously.
  • Cover these with the remaining three slices.
  • Toast each side of the Sandwich with butter in a pan.
  • Cut them into half diagonally and serve them hot with some chutney or ketchup.
